The Best Ginger Tea Ever

I'm not a coffee drinker but I do love my tea, especially when it's homemade. The mint is just starting to poke it's head out in my garden. It's not quite ready for picking yet, but when it is, I love to make this ginger tea with mint, lemon and honey. And it's oh so good for you!

Why?

Ginger - Ginger root has a very high level of antioxidants and contains chemicals that may reduce nausea and inflammation.

Mint - Peppermint oil seems to reduce spasms in the digestive tract, thus helping to alleviate digestion.

Lemon - Lemon contains antioxidants called bioflavonoids and is packed with vitamin C which can boost your immune system.

Honey - Some of the chemicals in honey may kill certain bacteria and fungus.

Here's what you do. Slice the ginger thin. Bring water to a boil and remove from heat. Steep the ginger and mint in the hot water for 10 minutes (either a tea pot or a saucepan work just fine). Now just add fresh lemon juice and a spoonful of honey.

And since Summer is just around the corner, this tea tastes great cold. Just let it cool off, place it in the refrigerator for a couple hours and serve with ice. Enjoy!
